 De bedoeling is uiteraard om verschillende soorten hout te gaan gebruiken, maar voor dit eerste lot zijn alle vaten nieuw en van eikenhout.

Ze bestaan uit 64 % Franse eik en 36 % Amerikaanse eik.

Chimay stelt met trots LOT 1 voor. Het gaat hier om een exclusieve productie van 15.000 flessen. Het bier werd bijna zes maanden gegist in nieuwe eiken vaten. Dankzij dit proces krijgt het product een prachtige donkere kleur en een perfect evenwicht.

Het verfijnde boeket komt volledig tot zijn recht wanneer de Blauwe Chimay wordt geserveerd tussen 10 en 12 °C.

A short time before the construction of the Trappist brewery in 1862, the monks at Chimay set about to brew in small quantities an easily digestible beer light in alcohol (4.8% per volume) whose gustatory palette placed it within the style of its predecessors. It was at the time reserved for members of the monastic community. Over time, this beer called “Golden” continued to reside within the abbey. It was subsequently offered to guests of the community then to staff members working for Chimay.

The Chimay Red Cap, or "Première", in 750 ml bottles, is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell.
