Brewery Boon

Since 1975, Boon Brewery has been owned and run by Frank Boon, one of the pioneers of the authentic lambic and gueuze revival. But the first signs of the brewery date back to 1680, as a farm-brewery and distillery in the village of Lembeek. In 1860 Louis Paul bought the brewery to brew only lambic and faro. From 1875, he began bottling gueuze lambic. In 1898, Pierre Troch bought the brewery. But after the economic crisis of 1927, it came into the hands of Joseph De Vits. His son, Rene is renowned for the production of soft and fine gueuze lambic. As Rene De Vits had no children, he sold the brewery to Frank Boon.

Black Label "Second Edition" (2016)

Black Label "Edition N°3" (2017)

What's the influence of oak foeders? What happens when you take Lambic from 4 different oak foeders to make 4 seperate Oude Geuzes? Discover this with our new Geuze Discovery Box!
The oak casks (foeders) used at our brewery (of which we have 158!) each have their own history and are characterised by unique microflora of wild yeast strains. Our bottles of Traditional Oude Geuze with cask numbers combine beer from one specific wooden cask (mono brew) with a very small quantity of young lambic (blend) that will kick off the bottle conditioning process. By using lambic from certain specific oak casks, we create geuzes with very unique properties, with wine- or whisky-like flavours, either very dry or very gentle. The number on the bottle always refers to the number of the cask.

Oude Gueuze Boon 25 cl

Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze.  After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries. Boon Framboise has an alcohol volume of 5%. Drink it when it is young.

Again, the basic old and young lambic are matured in oak casks. But here we add to one year-old lambic about 400 grams of real cherries per litre. This creates a second fermentation in the casks. Oude Kriek Boon then undergoes a further fermentation in the bottle and has an alcohol volume of 6.5%. After several months, the flavour has matured to the desired taste.

Faro Boon is a specialty based on old lambic beer and driven to which we add spices and sugar candy. This makes Boon Faro a sweeter and lighter version of lambic, as the alcohol content is just 5%. This lower alcohol lambic beer is the easiest to enjoy at any occasion. The candy sugar gives it a very delicate flavour. Faro is a popular Boon lambic beer, tasty and unpretentious.
