Tsjeeses, our X-mas Triple of 10% alcohol, is brewed only once a year, and this early February. After first open fermentation is passed, the young beer is moved to a 2nd vessell together with different types of stone fruits like mirabelles, grapes and peaches. Second fermentation takes place for about three to four months. The beer is moved again towards a bright tank, where decantation and further maturation takes place for another 2 months. Bottle conditionning takes place at the end of August and by early October, we have a fresh X-mas Ale.
